Gingerbread + white chocolate cookies

Pop some Christmas music on, grab the ingredients you need and welcome in the festive season with our favourite gingerbread & white chocolate cookies.

Each year, I love nothing more than to put the Christmas songs on, grab my apron and get baking in my kitchen. These cookies don’t take a lot of effort to bake & they always go down well with your visitors over the festive period.

Ingredients you’ll need,

  • 130g of unsalted butter, best at room temperature

  • 175g light brown sugar

  • 1 medium organic egg

  • 280g of plain flour

  • 1 teaspoon of vanilla extract

  • 1 teaspoon of ground cinnamon

  • 2 teaspoons of ground ginger

  • 1 teaspoon of ground nutmeg

  • 1 teaspoon of baking powder

  • 1/2 teaspoon of bicarbonate of soda

  • 250g of white chocolate chips, more if you want a real chocolate hit

 

Method to follow,

Pop all of your ingredients on your kitchen worktop, pop on your apron & pre-heat your oven to 180 degrees.

Find a large mixing bowl & cream together your butter and sugar

Next mix in your egg & vanilla extract

Sieve in your flour, baking soda, bicarbonate of soda and your lovely festive spices

Mix together until your mixture looks like cookie dough

Add in your chocolate chunks and lightly knead your cookie dough

Once you are happy, roll your dough into eight medium sized balls then place on a baking tray

Bake for around 12 minutes, if they don’t appear fully baked, pop them back into the oven for a couple of minutes

Once they are ready, take out of the oven and leave to cool


They are best served warm with a cup of something hot, enjoy…
